Mexican Chickpea Bean Maize Casserole Ole!


Ok so this one is a bit complex.

1st Part

1 Can of Chickpeas
5 Cloves Garlic
2 Teaspoons Olive Oil
1 Tablespoon Unsweetened Cocoa
1 Tablespoon Crushed Red Pepper
1/2 Tablespoon Oregano
1/2 Tablespoon Cumin
1/2 Tablespoon Salt
1/2 Cup of Water

Take all of these ingredients and blend it up. Add more water to make your mixture a little thicker than pancake mix. Set this aside for now.

2nd Part

1 Can Black Beans
1 small Can of Corn
3 cloves of garlic (chopped)
1/2 Onion (chopped)

Cook this up in a frying pan. Set aside.

3rd Part (which actually you probably have to do first)

1 Red Bell Pepper
1 Onion

Roast these.

4th part (combination step)

1. Cook the chickpea mixture like a pancake. If it is too thick it won't flip. That's ok, you can swivel it around to cook it evenly. Put heated cake type thing on a plate.

2. Top with roasted veggies.

3. Top with Bean & Corn mixture

4. Garnish with Cilantro

Pork & Beans Egg White Omelette


4 oz. pork, chopped into strips
1/2 medium onion, chopped
2 cloves of garlic
2 tsp olive oil
1/4 c. black beans

cook these ingredients together on low heat in a small frying pan

4 egg whites

cook these in a frying pan until done

food Journal 1/25/11

Ok, so i've been terrible about posting, but I've been worse at keeping my calories down.

So we're getting back to the basics. For Lunch I had dominican meal for about 800 calories. Dinner was a spicy corn soft taco for 485 calories. Daily total 1285.

I also did a light workout of yoga, pushups, jumping jacks and abs exercises.

A Mediterranean experiment not yet complete

5 cloves garlic
1/2 oz fresh ginger
2 tbsp. turmeric powder
1/2 c. chickpeas
1/2 tomato (chopped)
1/2 onion (chopped)
1 tbsp. olive oil
1/2 red bell pepper
2 teaspoons dry mustard
1 teaspoon cinnamon
1 tablespoon raisins
1/2 teaspoon hot paprika
1 teaspoon kosher salt
1 tablespoon honey
1 4 oz chicken breast

Put all of these ingredients in a sauce pan and cook on extremely low heat. Mine was a bit too gingery so make sure you finely chop or grate only the amount of ginger your taste buds can handle.

Provence Mustard Penne

1/2 Cup Penne Pasta

4 oz. chicken breast (chopped)
2 tbsp. chickpeas
1/2 onion (chopped)
1 pinch of kosher salt
1 teaspoon red pepper flakes
2 tablespoons worcestershire sauce
1/2 tablespoon dry mustard
1 tablespoon capers
1/2 tablespoon herbs de provence

Cook the chicken with all the ingredients under it. Mix with the cooked pasta. Bon a petit!

Hot Chickpea Salad


It's been awhile but I'm back.

Ok here is the dish

1/2 tablespoon olive oil
1 tablespoon turmeric powder
pinch of salt
pinch of black pepper
pinch of cinnamon
1/2 tablespoon honey

1/2 cup chickpeas
3 cloves garlic (finely chopped)
2 tbsp. onion
2 slices of tomato (chopped)
1 tablespoon black olives
2 strips of red bell pepper (chopped)

Pickled Horseradish Chicken Sandwich


Back from being sick. Sorry for the slow amount of postings.

2 tablespoons fresh horseradish
6 slices of pickles
2 slices tomato
1 baguette
1 oz. smoked gouda cheese
6 oz. chicken breast (shredded)
paprika to taste
pinch of salt
1/2 teaspoon butter
2 eggs

1. cut the baguette in half and lather on 1 tbsp. of horseradish (warm in the oven)
2. cook the chicken with the other tbsp of horseradish and pam spray
3. cook the 2 eggs like an omelet (with the butter, salt and cheese)
4. put the chicken, omelet, pickles, tomato and paprika on the baguette
5. cook in the oven for 5 minutes

Voila. Tangy, delicious sandwich. Not the healthiest, but I hadn't eaten all day on account of being sick. It also clears out the sinuses.
